Spicy Mayo, Tostones and   Steak

Ingredients

4 Plantains 

Cooking oil

Sirloin Steak 

For the Mayo Ketchup

1 cup Mayonnaise 

1 cup Ketchup

5 Garlic cloves minced

 2  tsp  Red pepper flakes

1 tsp Black pepper

2 tsp Hot sauce 

For the Steak

4 Garlic Cloves

1 Stick of butter

1 rosemary sprig

Splash of Balsamic vinegar

Sprinkle of salt

1 tbsp  Chipotle Seasoning

Parsley for garnish 


Preparation


  1. Peel and slice the plantains 1” thick

  2. Fry in warm oil until golden, remove place on top of paper towel

  3. Smash the plantains

  4. Fry a second time, until golden brown and crispy, set on top of paper towel to absorb excess oil, lightly sprinkle salt 

  5. Pat dry the steak then season the steak with a sprinkling of chipotle seasoning 

  6. Sear the steak 5 minutes on both sides in a properly heated  pan, cast iron is best.  Add butter, balsamic vinegar and garlic cloves. Baste the steak. Cook steak to your preference, medium rare, well done etc.

  7. Let the steak rest for a few minutes  before slicing 

  8. For the sauce, in a bowl, combine mayonnaise, ketchup, hot sauce, minced garlic, black pepper, red pepper flakes, stir and mix well.

  9. Slice the steak and plate next to the tostones, garnish with a sprinkling of freshly chopped parsley and serve with the spicy mayo sauce 

  10. Enjoy!!
